Steps Towards Sustainability

Animal welfare commitment forward in the country towards sustainable future

Ambala Institute of Hotel Management is committed to introducing animal welfare standards in its food supply chain. We aim to focus on public health, protecting the environment and protecting animal welfare. We believe that responsible sourcing is of utmost importance, and we aim to promote sustainable innovation amongst our clients. We will encourage and assist our clients to follow humane and sustainable procurement practices of animal products in the food supply chain. We believe that animals, whether at farm, in transit, or in market must be have the following five freedoms –

Towards Sustainability, Steps Towards Sustainability

In order to meet these freedoms, 100% of eggs (shell and liquid) used at our lab and canteen operations are procured from cage-free egg suppliers. We commit to follow this practice, or procure from only cage-free farms for our present and future institution and restaurant operations. We will work with our existing egg supply chain partners, and cage-free/free-range egg producers to fulfill this commitment. We strive to introduce sustainable practices in our food supply, minimize our environmental footprint and serve our clients and consumers responsibly.

To promote plant-forward consumption amongst the students of Ambala IHM, the institution will undertake the development of recipes to replace animal-based options on the canteen menus, and assist the restaurants within the Institute’s campus to replace animal-based options with plant-based alternatives. In this regard, the Institute commits to the replacement of 15% of the total volume of animal products typically purchased each year, with plant-based alternatives by year 2021 and will raise it to 30% by 2022.

This will consist of:

a. 30% of the dairy based beverages on our present menu replaced with plant-based dairy alternatives
b. 30% of the animal protein in all meat & egg-based foods on our future menus and services replaced with plant-based protein
We will implement this commitment in a phase wise manner, and 15% of the total animal products purchased will be replaced by plant-based alternatives each in 2021 and 2022.

We are also committed to sourcing meat from suppliers who meet the five freedoms of animal welfare. We are developing animal welfare standards which will be applied throughout our supply chain, including for chicken meat, goat, sheep and aquatic animals. We will publish these commitments and standards by year 2021, along with the report of our progress of our commitment.
We will report our progress towards our goals annually.
